Throw Up Salad

When I played ball at BYU, Coach Michaelis threw the best parties. She was all business on the court, but come Easter time she really spoiled us with dinner and a huge candy hunt at her home. One of the predictable dishes at our team parties was a jello salad that my roommate Katie lovingly referred to as "throw up" salad. It is a pretty common Mormon dish, I think, but it wasn't something my Mom ever made, so I was intrigued with it and loved it every time Coach made it for us. Sometimes I make it for old time's sake, though my kids aren't huge fans (yet).

Here's a recipe I think is pretty close. I would like to make it for Avery's party Saturday, but hesitate because I think she would prefer pre-packed jello cups.

Ingredients
16 ozs cottage cheese (carton)
20 ozs crushed pineapple (drained)
3 ozs Jell-O Gelatin Dessert (strawberry)
8 ozs cool whip

Mix Cottage cheese and dry jello.
Mix in Cool Whip
Add pineapple (drained)'
Refrigerate overnight for best flavor.
