Creamy Tomatillo Dressing

I made a Café Rio copy cat sweet pork for Emily's baptism lunch. I also made black beans and rice, and served with salad, tortillas and chips. We got so much positive feedback on the food! My favorite part was the dressing. It was really close to café rio's! I got all the recipes HERE. Here's the dressing recipe:
  • 1 packet TRADITIONAL Hidden Valley Ranch mix
  • 1 c. mayonnaise (next time I want to dry greek yogurt)
  • 1 c. buttermilk (I used regular milk)
  • 2 tomatillos, remove husk, diced
  • 1/2 bunch of fresh cilantro
  • 1 clove garlic (I used chopped)
  • juice of 1 lime
  • 1 jalapeno (I used half the seeds, and it was spicy! Remove the seeds for less heat)
Mix all in blender. Enjoy!
 
This dressing made way more than I expected. Easily served 20.
