For those of you lucky enough to eat one of my mom's dinner rolls, you know they are the best. I have never tried to make them. Because my mom was out of town on Easter Sunday, I decided it to give it a try. But, it turns out I didn't have any potato flakes on hand. I would never have guessed that my mom would purchase potato flakes for any reason, but I stand corrected. If you want to make some, go buy some potato flakes, and then use this super yummy recipe:
Mom’s Rolls
2 c scalded milk
2 Tbls yeast dissolved in ¼ c warm water
1 cup mashed potatoes (can use instant potatoes)
½ c shortening
2 tsp salt
1 tsp vanilla
1/3 to ½ c sugar
2 eggs
6-7 cups flour (when making wheat rolls, use 3 cups wheat and rest white)
In large mixing bowl, pour scalded milk over potatoes, shortening, salt, sugar, and vanilla. Let cool to warm. Beat in 2 cups flour, then yeast and eggs. Beat in rest of flour and knead on board if necessary. Roll, cut and let raise on pan (1-2 hours) till double in size. Bake 350° for 15-20 min.
